API: add analytics routes for detailed camp statistics

Describe the API issue

Add a new route and corresponding endpoints for analytics to get analytics of the current camp with the following stats:

• No of patients registered
• No of patients done vitals
• No of patients who completed their consultation
• No of prescriptions served
• No of patients taken food
