docs: refine contributing.md with gitlab workflow, structure, and setup fixes

Description:

Refined the CONTRIBUTING.md to accurately reflect the current project setup and development workflow. Updated repository cloning instructions to GitLab, added proper branching strategy, replaced Pull Request terminology with Merge Request, and aligned project structure with the actual codebase.
